Wrap ‘N’ Roll: 5 Quick, Easy Vegan Tortilla Recipes You’ll Love!

1. Spelt Wrap with Stuffed Rice, Curried Cauliflower & Tofu

Wash and cut a cauliflower into ‘flowers’, add 1 tablespoon of curry, a little salt, olive oil and mix. Bake the flowers at 180ºC for 20-25 minutes. Simultaneously, boil basmati rice in a saucepan for 20-25 minutes. Sauté onion and chives, adding carrot and zucchini.

Cut the tofu into elongated rectangles, season with curry and salt and pop those into the pan to cook as well. Place the spelt wraps in a hot pan for a couple of seconds. Then fill with the filling you’re prepared along with some cherry tomatoes. Wow…scrumptious!

2. Falafel Wrap with Tahini Sauce

Prepare a sauce with tomato chunks, peppers, chilli, garlic, shallots and cumin. Add cooked chickpeas and season with salt and pepper. Place the falafels in a bowl and bake them at 180ºC for 10-15 minutes.

Once the filling is ready, make a roll with the chickpeas, and sauce that you’ve prepared, add the falafels and romaine lettuce. A heavenly tortilla taste mix – I’m sure you’ll agree!

3. Roasted Eggplant Wrap with Tahini Sauce

Bake aubergines with olive oil, salt and pepper at 180ºC for 15 minutes. Chop lettuce, rocket spinach (arugula), and add coriander. Mix and add lemon juice and a little salt. For the tahini sauce: mix tahini paste, water, fresh lime or lemon juice, a little salt and a little cumin.

Now heat the tortillas in a pan or in the oven. Afterwards, simply pour the tahini sauce, on the aubergines and a green-leaf salad adding in some cherry tomatoes, with tomatoes. Wrap up and chow down on this homely mix!

4. Cabbage & Hummus Wrap

Wash the cabbage leaves and boil until they are soft enough to roll then dry them with kitchen paper. Wash and cut the rest of the ingredients carrots, young shoots and tomatoes into small pieces. Now spread the hummus on the wrap’s surface and place the vegetables on top. Simply wrap ‘n’ roll and get ready for a supremely healthy taste sensation to remember!

5. Spinach & Textured Soy Wrap

Mix 1 chopped onion, 2 tomatoes, textured soy, cooked corn, and oregano, with a little salt, pepper and olive oil into an oven tray and bake for 30 minutes at 180ºC. Heat a tortilla and put spinach leaves, grated carrot and the prepared mixture onto it. Roll it up and enjoy a wholesome vegan treat!
