Vegan Desserts: Top 5, Two-Ingredient-Only Recipes You’ll Love!

Comfort foods are something we seek out when we need a little bit of tender loving care. With the stressful year, a lot of us can probably relate to seeking solace in some sweet, gooey dessert! It’s just the morale booster we need when in short supply. We have put together our list of top 5, two-ingredient vegan desserts for a well-being binge-fest that is super easy to create and enjoy at home. 1. Peanut-Butter Caramel Fudge

This richly-flavoured fondant slab originating from the US is known to be one of the most indulgent sweet treats. Mix peanut butter with sweetened condensed coconut milk to create a mixture so creamy it could make you melt! Freeze the mixture for best results and if you want to sensationalize the sweetness further, sprinkle with sea salt flakes (yep!) for a dessert that you’ll soon be making batches of.

2. Coconut Cups

Not everyone is a fan of coconut, but this wonderful drupe is packed high with antioxidants that protect your cells and bone health. For this super simple dessert, simply drizzle some melted dark chocolate in a paper cup, layer with some melted coconut butter and finish off with another layer of glossy chocolate. Once refrigerated for a few hours you will have a mini coconut cup bursting with rich flavour and some healthy bonuses inside.

3. Vegan Cookie Dough

Raw cookie dough throws me right back to childhood and makes for a great dessert whether you have kids of your own or consider yourself a big kid at heart (like me). Simply mix a nut butter of your choice – cashew butter works great with this recipe – with coconut flour to form a soft and mouldable dough. Of course, once you have whipped up this two-ingredient base, you can add whatever vegan (or dare we say, non-vegan) filling you like depending on…whatever you prefer!

4. Chocolate Mousse

This chocolate mousse calls for vegan chocolate and that magic ingredient – aquafaba. This wonderful brine, when whipped creates soft white peaks which only requires the addition of melted chocolate to form a decadent chocolate mousse. The aquafaba advantage is that it’s practically calorie-free making this dessert a ‘go to’ if you’re looking for a lighter option!

5. Banana Pancakes

Pancakes are usually considered a breakfast food but we all know that dessert for breakfast can only be a winner! To make a simple banana pancake, add eggs with mashed banana and fry like you would a normal pancake. Bananas are one of the richest sources of potassium as well as other vitamins including B6 and C and is fantastic for skin health.
