Sometimes, we think it’s difficult to maintain a varied diet if we eat sweets. On the other hand, if you’re vegan, it may be even more difficult for you to find these types of snacks.

However, there are alternatives like homemade vegan cookies that are a great option for everyone. 1. Vegan Coconut & Banana Cookies

For this delicious recipe we need to preheat the oven to 180º. In a bowl, add two bananas and mash them with a fork. Then add 80g of grated coconut and a pinch of cinnamon and mix well.

With a spoon take out a few portions of the mix and form balls with your hands, shaping the cookies.

Now place them on a baking tray and bake for 25-30 minutes. Once they’re golden brown, you can also melt a piece of dark chocolate in the microwave, then spread it over the cookie and…get ready to enjoy!

2. Vegan Oatmeal, Almond & Cocoa Cookies

To make these you simply need to hydrate two dates for 15 minutes in boiling water. Then grind them and add 100g of oatmeal, 15g of almond pieces and a teaspoon of pure defatted cocoa powder. Then, mix everything until you have a dough.

Then put it in the oven preheated to 180 ° for about 15 minutes. Remove, let it cool on a rack and you’re done!

3. Vegan Lemon & Chia Cookies

For this delicious recipe you just need to mix two teaspoons of lemon juice, two teaspoons of soy yogurt, two teaspoons of chia seeds and 30g of almond or oatmeal in a bowl. Once you’ve made a dough, turn it into balls and let them sit for 15 minutes in the fridge.

Then, put them in the oven for about 10-15 minutes at 180º. When that time is up, it may seem that they are undercooked, but once they are out of the oven they will continue to cook with their internal heat.

Let them sit for 5 minutes and you’ll find they’re already harder to touch. If you want to sweeten up any these recipes a little more, you could also add a little honey or other sweetener such as stevia.
