Who said that eating healthily is difficult on a budget? In this article I’ll explain that this is possible, that you can make countless healthy, simple, fast and cheap recipes. First of all, you need a decent plan, know how much time you want to invest and adjust your budget accordingly.

1. Kale & Bean Power Bowl

To prepare this one you only need fresh, chopped spinach or kale, brown rice or cauliflower instead of rice, chickpeas or kidney beans and homemade vinaigrette (olive oil, red wine vinegar, Dijon mustard, garlic, salt and black pepper).

You can also add dried tomatoes, dried fruit or feta cheese to enhance the flavor. All these ingredients can be tastefully prepared and gently mixed into one, super-scrummy bowl!

2. Tofu Hummus Bowl

For this you simply need hummus (which you can buy or make), lemon (grated and juiced), cooked, mixed grains (quinoa and red rice or brown rice depending on budget), chopped baby spinach, avocado, tofu, and red onion.

Prepare the hummus with the lemon zest and juice, then sprinkle in the mixed grains. Add the rest of the ingredients and add a little more lemon juice. Once everything is in, simply mix it up and enjoy!

3. Salmon & Basmati Rice with Yogurt Sauce

This can be made with quinoa and edamame beans depending on preference and budget. Also, salmon can be substituted for canned tuna.

To prep this delicious recipe gather basmati rice, avocado, lemon juice, mushrooms, spring onion, natural yogurt, salmon, cayenne pepper, chives, salt, curry powder and olive oil. Prepare the ingredients as you normally would and then mix it all in the bowl. Done!

4. Roasted Chickpeas, Broccoli & Tahini Sauce

For this yummy food bowl recipe, first, bake cooked chickpeas and broccoli in a pan with a bit of olive oil and cumin.

To prepare the tahini sauce, mix the tahini, lemon juice, olive oil and honey. Once all ready, pop it into a bowl with boiled eggs, radish and tomato, give it a quick mix and then it’ll be time to tantalize your taste buds!

5. Vegan Bowl with Colored Noodles

This food bowl requires a small cauliflower (cut into florets), kale, turmeric, tricolor quinoa, carrot, zucchini, beetroot, marinated tofu, and dried fruit with seasoning to taste.

Bake the cabbage with olive oil and turmeric, then cook the quinoa. (You can also use mixed or whole grain rice.) To form the noodles, spiralize the carrot, zucchini and beetroot and then cook the tofu over a little low heat.

Once all the ingredients are ready, add them in a bowl with your preferred sauce and get ready for a simply divine taste sensation!
