Cauliflower is enjoying some well-deserved time in limelight at the moment. For decades it was the runt vegetable of the Sunday dinner, sitting limp, boiled and uneaten on plates across the country. However, thanks to its ‘hipsterization’, cauliflower is in en vogue. It’s the prodigal son of fancy online recipes, and every other high-street eatery is turning it into chicken wings. Cauliflower rice is one of the more exciting spins on cauliflower. 1. Curried Cauliflower Rice

The lovely thing about cauliflower rice is – it’s easy. Usually the trendy spins on ordinary foods like rice take an age to get right, but not cauli-rice.

Begin by chopping a cauliflower into small chunks (I’d say halving or quartering each floret would suffice). Then, either use a cheese grater or food processor to blend the cauliflower into fine ‘rice’.

Next, finely chop half an onion and fry in a tablespoon of olive oil, until soft. To ‘curry’ this dish, add a crushed clove of garlic, finely chopped coriander, and a teaspoon or two of turmeric, cumin, garam masala and tamarind paste. Add in your cauliflower rice, and cover until tender.

2. ‘Green as Grass’ Cauli-Rice

If you’re wanting to lower your calories, but still get a decent dose of protein, then this recipe ticks the box!

Once again, make your cauli-rice with a food processor or cheese grater. Next, boil some spinach and peas until the spinach is wilted and peas are soft, before chopping the spinach finely. Chop a handful of pistachios into small chunks. Add all the ingredients into an oiled saucepan, and cover until the cauliflower is tender. The result should be ‘green as grass’, low-calorie, and protein-packed.

3. Mediterranean Cauli-Rice

This recipe should have you hitting your 5-a-day all in one meal.

After preparing your cauli-rice, chop courgette, spring onions, aubergine into small chunks, and pluck five or six cherry tomatoes. Fry your vegetables in a tablespoon of olive oil, a crushed clove of garlic and a healthy splash of lemon juice. Add your cauli-rice. Serve, and pretend you’re eating beneath the Mediterranean sun. Yum!
