Cauliflower: 5 New & Fascinating Ways to Serve It Up!

Cauliflower should by no means be regarded as a boring vegetable! Instead, we should acknowledge it as being highly flexible and versatile, as the multitude of ways in which it can be served will rarely disappoint. Being high in fibre and vitamin C, this veggie is available all year round, with its peak season occurring in the later winter months. 1. Cauliflower Tots

Even the name sounds appealing, and how could it not be when we’re talking about panko-breaded cauliflower?

Make a batter of flour and oat (or soy) milk, this needs to be quite thick. In a separate bowl, place your panko breadcrumbs and add additional spices (pepper, paprika, onion granules, garlic granules) to make it extra flavoursome. Dunk small cauli pieces first into the batter, making sure they’re evenly coated, and then into the breadcrumbs. Place on a baking tray and roast for up to 30 minutes. Serve with your favourite dip.

2. Cauli-Rice

3. Cauli-Steaks

Admittedly, cauli steaks aren’t exactly going to match up to the usual beef steaks you get from a butcher, but they’re not really meant to either!

Cut your cauliflower floret into steak ‘slices’ and marinate it in different spices before frying in a shallow pan. For an Asian inspired dish, try marinating in honey, soy sauce, teriyaki sauce and 5 spice. Yummy!

4. Cauliflower Mash

Mashed potato can extend to so many other vegetables, including cauliflower! Roast your cauli for up to 15 minutes before blitzing it in a food processer with melted butter and cream. You can also opt to add cream cheese to create an even creamier, cheesy texture. Customise it to your liking with pepper, Dijon, or wholegrain mustard.

5. Cauliflower Cheese

Ok, not so much a ‘new’ recipe, but with Christmas approaching it’s the perfect time to give the hearty side-dish that is cauliflower cheese some attention!

Chop your cauli into smallish pieces and place in a deep roasting dish. In a sauce-pan make a roux with your plant milk and flour, and once the desired consistency is reached, add your vegan cheese, nutritional yeast, black pepper and Dijon mustard. Mix this altogether and pour over your cauliflower. Roast for up to 30 minutes and try not to eat the whole dish all at once!
