Avocado can be a bit mysterious. Apart from putting it into a salad what else can you really do with it? 1. Chocolate Mousse

You wouldn’t believe this chocolate mousse is so healthy because it tastes so indulgent. Try it next time you have a sweet craving and you’ll be nourishing your body too!

Ingredients: (Serves 4)
Flesh of 2 ripe avocados (240g)
½ cup chocolate chips (80g) or cocoa powder (40g)
¼ cup to ½ cup milk of choice (60-120g)
1 tsp pure vanilla extract
1/8 tsp salt
Pinch of stevia or 2-6 tbsp sweetener of choice

Method: You have two options for this recipe. The version with the chocolate chips will be richer; the version with the cocoa powder will be lower in fat and sugar.

If using the chocolate chips, carefully melt them before beginning. For both versions, combine all ingredients in a blender or food processor until completely smooth. Use less milk for a thicker mousse and more for a thinner/creamier result. If using chocolate chips, use only 2-3 tbsp sweetener of choice or pinch of stevia. If using cocoa powder, use the greater amount of sweetener. Serve with toppings of your choice.

2. Breakfast Smoothie

Here’s a simple smoothie recipe that everyone at home can try because all you need is four ingredients!

Ingredients:
1 frozen banana (the riper the sweeter)
½ an avocado
½ cup almond milk
A touch of honey or agave nectar

Method: Whizz it all up in a blender and voila! A creamy and delicious smoothie for any time of the day. You can even use this as a base for other smoothie variations, just add your favourite fruits to the mix.

3. Creamy Minted Pea and Avocado Dip

Need something extra to add to a dinner party? Make this quick and easy dip for your guests to dip veggies in and use the leftover to put on your toast the next morning!

Ingredients:
1 avocado
½ cup peas
4 brazil nuts
2-3 tbsp water
Handful of fresh mint leaves
1 juicy lime or lemon, 2 if they’re not very juicy
1 tbsp of apple cider vinegar
Pinch of salt

Method: First rinse the peas with warm water, letting them defrost for a minute. They don’t need to be cooked but the dip is way too cold if you use totally frozen peas! Then juice the lime before adding all of the ingredients to a food processor, it should take 2-3 minutes for a beautifully smooth consistency to form. Enjoy!

4. Warm Stuffed Avocados

Try this when you want to rustle up a quick starter or if you fancy something different for lunch.

Ingredients: (Serves 4)
2 large ripe avocados
3 tbsp olive oil
1 plum tomato, deseeded and chopped
4 sundried tomatoes in oil, drained and chopped
50g pitted black olive, quartered
2 spring onion, finely sliced diagonally
1 tbsp capers
1 tbsp each freshly squeezed orange, lemon and lime juice
1 tbsp cider vinegar
2 tsp caster sugar
2 large fresh torn basil leaves

Method: Heat grill to hot. Halve the avocados and discard the stones. Brush each half with ½ tsp of the olive oil and arrange on a baking sheet. Grill for five minutes. In a small bowl, toss together all of the remaining ingredients. Season to taste then divide between the hollows of each avocado. Serve immediately.

5. Green Tea and Avocado Ice Lollies

I know I know, it sounds crazy but don’t knock it ‘til you try it! They’re super easy to make, refined, sugar free, vegan and gluten free!

Ingredients: (Makes 4)
3 avocados
1 14oz. can of coconut milk
1 tsp pure vanilla extract
2 tbsp matcha powder
2 tbsp agave nectar

Method: In a food processor pulse the avocados and coconut milk until smooth. Add the vanilla extract, matcha powder and agave nectar and pulse until combined. Divide mixture between four ice lolly moulds and place in the freezer until frozen. Note: If you don’t have ice lolly moulds you can pour the mixture between four glasses and place a solid stick in the centres.
