5 Top Healthy & Delicious Popcorn Recipes!

For those of you who are looking for something tasty to just snack on throughout the day or if you’re looking to unwind after a long day with a nice bowl of popcorn, have a crack at these 5 Top Healthy & Delicious Popcorn Recipes!

The basis for making all of these recipes is to first pop the corn then follow the simple method under each ingredient list. First add ¼ tablespoon of coconut oil to a saucepan and add 2-3 popcorn kernels to the pot over a medium heat. Swirl around for a bit and wait, when they begin to pop quickly add 2 tablespoons of the kernels and cover. Shake the pot frequently so that the oil can be evenly distributed. Cook until the popping sound slows to about one pop per every few seconds, remove the popcorn from the pan and place into a bowl ensuring that there aren’t any unpopped kernels in the bowl.

1. Cinnamon Caramel
Ingredients:
2 tablespoons of maple syrup
½ tablespoon of either almond or peanut butter
½ teaspoon of pure vanilla extract
A pinch of salt
A pinch of cinnamon

Method: In a small pot bring the maple syrup to a boil over a medium heat adjusting the temperature frequently, after 2 minutes add in the vanilla extract, nut butter, salt and cinnamon. Mix until all ingredients are well blended. Pour the mixture over the popcorn and stir with a big spoon until well mixed. Leave to cool for 5 minutes and then enjoy!

2. Dorito
Ingredients:
1 tablespoon of nutritional yeast
1 pinch of turmeric powder
½ pinch of cayenne pepper
1 pinch of paprika
1 pinch of sea salt
½ teaspoon of coconut oil

Method: In a small bowl add the nutritional yeast, turmeric, garlic, onion, cayenne pepper, paprika, sea salt and mix together. Add the seasoning mix to the popcorn and stir well so the popcorn is evenly coated. If the seasoning doesn’t all stick add some more melted coconut oil and stir again.

3. Apple Pie 
Ingredients:
1 pinch of vanilla extract
¼ teaspoon of cinnamon
1 tablespoon of apple pie spice mix
1 teaspoon of maple syrup
¼ teaspoon of coconut oil

Method: Melt the coconut oil in the microwave for 15 seconds, add in the vanilla, cinnamon, apple pie spice mix and maple syrup. Pour over your popcorn bowl and mix in with a spoon.

4. Vanilla Almond 
Ingredients:
1 medjool date
½ teaspoon of vanilla extract
¼ teaspoon of almonds
1 tablespoon of warm water

Method: In a food processor combine the coconut oil, dates, almonds, vanilla powder and water and blend until the mixture is nice and smooth. Put the mixture into the bowl and stir in the sauce evenly. Once the sauce has been stirred in transfer the mixture over to a baking tray and bake for 8 minutes stirring the popcorn every 2 minutes. Once cooked leave to cool down on a cooling rack for 5 minutes.

5. Green Superfood
Ingredients:
½ tablespoon of spirulina
½ teaspoon of salt
½ teaspoon of garlic powder

Method: Add all of the ingredients into a mixing bowl and mix together. Drip the seasoning over the bowl of ready popcorn and stir with a spoon.
